Ground Cardamom

Cardamom is an aromatic spice. Fruity, floral, citrusy and pungent with a dash of warming eucalyptus. It’s amongst Yotam’s favourites on his spice shelf - mainly because it’s incredibly versatile. On the sweet side, cardamom aromatises custards, rice puddings and ice creams, giving them a whack of character. But it also works with sweeter vegetables - carrots, parsnips, pumpkins. And its citrusy notes even make it a natural companion to seafood.
