Poon's Chilli Oil
An aromatic chilli oil infused with the intense flavours of salted black beans, Bill Poon made this originally for friends and family who sent empty jam jars to be filled. Bottled at the instigation of Helen Goh from Ottolenghi who tasted one of Bill Poon’s jars, it has become a favourite of many foodies. Unusual in that it uses salted black beans, Poon’s Extraordinary Chilli Oil has a depth and intensity beyond just heat.
Use as you would any chilli oil. You can create a Chinese version of spaghetti aglio e olio by simply stirring it through noodles, wet still from the noodle water.
