Berbere

Berbere is a mix of sweet and savoury spices from Ethiopia and Eritrea. The exact blend varies from region to region but its backbone is always fenugreek, ginger and paprika. It’s complex, robust and incredibly aromatic. Ours uses nutmeg for an added sweetness. Toss it with vegetables before roasting, use it as a dry rub on pork or poultry before grilling, or stir into yoghurt and serve with fruit.
