Ancho Chillies are a mild, sweet-tasting variety of dried ripened poblano chilli. They’re most commonly used lightly toasted and soaked, or just soaked, and then ground smooth with other ingredients for cooked sauces. They have a raisin-like sweetness, coffee-like bitterness and medium heat. For a quick, bright and slightly spicy chilli oil, dice an Ancho Chilli and pour over sizzling-hot oil (into a heatproof bowl).
